Taste Buddies, it never fails: you see something on social media that you want to try at home. It could be a recipe, a hair tutorial, smokey eye makeup look–you name it. In the video, the influencer perfectly achieves the desired result in a cute video with vibey music playing in the background.
You say to yourself: “I can do that!”
Then, you utterly fail.
That’s basically what happened when the Toni Girls attempted to replicate the gorgeous, chocolate churro empanadas that we saw on Instagram. We were inspired by the fabulous foodie known as EatwithAlyssa.
Alyssa knocked out the empanada recipe in a video that lasted only a few seconds, and the results looked drool-worthy.
Our version of the chocolate churro empanadas wasn’t perfect, but we learned a few things that could help you perfect your version.
Here’s what you can try:
Ingredients
You will need:
1 cup of water
¼ cup sugar
½ teaspoon vanilla
½ teaspoon salt
2 tablespoons of butter
1 cup of sifted flour
Frozen chocolate squares (We used semi-sweet chocolate chips because that’s what we had on hand.)
1 egg
Cinnamon sugar (We mixed up cinnamon and sugar for the same effect.)
Oil for frying (We ended up using a combination of canola oil and vegetable oil.)
The Steps
First, add water to a pot on medium heat, and add your sugar, vanilla, salt, and butter. Wait for the water to begin boiling.
Once the water begins to bubble, add the sifted flour. QUICKLY TURN OFF THE HEAT, and stir until you get a dough.
Then, place the dough in a separate bowl and press it down with a spoon (as if to mold or flatten it to the shape of your bowl).
Next, let the dough cool for a few minutes and then fold an egg into the dough.
Here’s where the Toni Girls encountered a problem. Our dough became super soupy when we added the egg on the first try (Yes, it took us two tries to get this recipe right). We believe that this problem could have been solved by adding more flour to the dough. But we opted to start over because the egg soup situation did NOT look appealing.
After you fold in the egg and work it into a nice doughy consistency, flour your hands and any surface that you will use to roll the dough into little empanadas. This is an important step that the Toni Girls learned the hard, sticky way. Flour is your friend.
Once your whole kitchen is floured, grab a heaping spoonful of the dough and roll it into a perfectly round ball. (EatwithAlyssa’s recipe called for about 1 ½ teaspoon.) Then, flatten the ball into a circle.
In the top half of your circle, add the chocolate squares (or chips). Then, fold the dough over so that you have a half-circle. Next, take a fork and seal the edge of the empanada.
(Toni J thought it would be a good idea at this step to make little chocolate churro balls instead of empanadas. That didn’t work out well for her because the balls did not cook all the way through. They were thick, so they would have had to fry for too long to get done in the middle. Live and learn, Taste Buddies.)
Fire up the grease and drop those puppies in!
That’s it! After the empanadas become golden brown, let them cool on a paper towel.
Sprinkle cinnamon sugar all over and enjoy!
